Every “Baker” needs a go-to cake recipe for dinner parties! While we loved our “Strawberry Cream Dreams Cake” recipe it wasn’t a showstopper as it was geared toward a health conscious or diabetic audience. This time around, we are pulling out all the stops with my fiancés “Blueberry Fields Cake” recipe. We were invited to a game night and knew exactly which delectable dessert we were going to bring!

For Cake
  1. 1 stick butter
  2. 3/4 cup sugar
  3. 1 1/2 cup self rising flour
  4. 2 eggs
  5. 1/2 cup milk (slightly warm)
  6. 3 tbsp sour cream
  7. 1 tsp vanilla
  8. 1 cup frozen blueberries
  9. 1/8 cup self rising flour
For Frosting
  1. 6 oz Philadelphia cream cheese
  2. 1 tbsp butter
  3. 3 1/2 cups powdered sugar
  4. 1 tbsp milk
  5. 1/2 tsp vanilla
For Glaze
  1. 1 cup blueberries
  2. 1/4 cup orange juice
  3. 2 tbsp lemon juice
  4. 1/3 cup sugar
  5. 1 tsp butter
  6. 1/8 cup cold water
  7. 1 tbsp corn starch
For Cake
  1. 1. preheat oven to 350°
  2. 2. grease & flour two 9 in. round cake pans
  3. 3. place blueberries in bowl, toss with 1/8 cup flour (set aside)
  4. 4. in a separate bowl, cream butter well. Add sugar and beat until light & fluffy. Add sour cream and beat in well.
  5. 5. add eggs one at a time and beat each in well, then add vanilla
  6. 6. add flour and milk alternately begin and end with flour
  7. 7. fold in blueberries carefully, do not over mix
  8. 8. pour batter into prepared pans
  9. 9. bake until golden brown (be cautious as to not over bake the cake)
  10. 10. remove and let cool completely
For Frosting
  1. 1. beat the cream cheese well
  2. 2. add butter, beat again
  3. 3. incorporate the powdered sugar, one cup at a time
  4. 4. if mixture becomes too stiff, add milk
  5. 5. add vanilla, mix well
For Glaze
  1. 1. let blueberries soak in sugar, orange & lemon juice for at least 5 min
  2. 2. add mixture into pot
  3. 3. begin heating on medium heat, add butter, mix well and bring to full boil
  4. 4. combine corn starch and water, add to berry mixture
  5. 5. mix well and boil for an additional minute
  6. 6. remove from heat, mixture should thicken
  7. 7. let cool completely (cannot be warm whatsoever or frosting will melt)
Final Steps
  1. 1. place first cake layer onto plate/serving dish
  2. 2. spread frosting atop
  3. 3. add second cake layer
  4. 4. frost top and sides of both layers
  5. 5. pour cooled blueberry mixture (glaze) on top and spread to sides carefully
  6. 6. ENJOY!
Notes
  1. TIP: when baking I recommend all ingredients be room temperature, this makes for a more delicious and error-free cake!
