This weekend my fiancé and I had plans to spend the day with his family for an outdoor get-together. Being the avid “Baker” that he is, he knew he couldn’t get away without making a cake for the occasion. It has been a while since he had made my favorite strawberry cake so this was the ideal time to “pass GO and collect my $200!” 

He modified the recipe to be diabetic friendly for one of the family members. I love this light spin on one of my most treasured cakes. #GuiltFree

This is the sugar-free version of one of my favorite quick & easy go-to strawberry cake recipes.

For Cake
  1. 1 sugar-free white or yellow boxed cake mix
  2. 1 3 oz. box sugar-free strawberry jello
  3. 4 eggs
  4. 1/2 cup Splenda
  5. 1/4 cup flour
  6. 1 tsp. vanilla
  7. 1 cup vegetable oil
  8. 1/2 cup milk
  9. 1/2 cup freshly chopped strawberries (I always opted for more)
For Icing
  1. 2 8 oz. Light Cool Whip
  2. 1 tsp. vanilla
  3. 1 cup finely chopped strawberries
  1. 1. preheat oven to 350°
  2. 2. grease two 9 in. round cake pans, set aside
  3. 3. mix all ingredients in large mixing bowl
  4. 4. divide mixture between greased pans
  5. 5. bake for 20-30 min or until a toothpick comes out clean
  1. 1. scoop Cool Whips into large mixing bowl
  2. 2. fold strawberries and vanilla into Cool Whip
  1. 1. place first cake layer on cake dish
  2. 2. add a generous dollop of Cool Whip
  3. 3. add second cake layer
  4. 4. finish off with remaining Cool Whip mixture
  1. Regular version: replace sugar-free items with standard products.
