
This weekend my fiancé and I had plans to spend the day with his family for an outdoor get-together. Being the avid “Baker” that he is, he knew he couldn’t get away without making a cake for the occasion. It has been a while since he had made my favorite strawberry cake so this was the ideal time to “pass GO and collect my $200!”
He modified the recipe to be diabetic friendly for one of the family members. I love this light spin on one of my most treasured cakes. #GuiltFree


"Strawberry Cream Dreams Cake"

Serves 8
This is the sugar-free version of one of my favorite quick & easy go-to strawberry cake recipes.
For Cake
- 1 sugar-free white or yellow boxed cake mix
- 1 3 oz. box sugar-free strawberry jello
- 4 eggs
- 1/2 cup Splenda
- 1/4 cup flour
- 1 tsp. vanilla
- 1 cup vegetable oil
- 1/2 cup milk
- 1/2 cup freshly chopped strawberries (I always opted for more)
For Icing
- 2 8 oz. Light Cool Whip
- 1 tsp. vanilla
- 1 cup finely chopped strawberries
Cake
- 1. preheat oven to 350°
- 2. grease two 9 in. round cake pans, set aside
- 3. mix all ingredients in large mixing bowl
- 4. divide mixture between greased pans
- 5. bake for 20-30 min or until a toothpick comes out clean
Icing
- 1. scoop Cool Whips into large mixing bowl
- 2. fold strawberries and vanilla into Cool Whip
Combining
- 1. place first cake layer on cake dish
- 2. add a generous dollop of Cool Whip
- 3. add second cake layer
- 4. finish off with remaining Cool Whip mixture
Notes
- Regular version: replace sugar-free items with standard products.
